Instant Dry Yeast

Typically vacuum-packed, Instant Dry Yeast (IDY) is a dry yeast that resembles tiny particles of vermicelli. Because of its small particle size, IDY absorbs liquid rapidly and does not need to be hydrated before mixing into flour.

Able to be stored and used at room temperature, IDY is a feasible option for bakers not using fresh or compressed yeast.

  • Instant dry yeast specially developed for doughs with little or no sugar: 0 to 10% sugar by weight of flour.

Instructions for use

  • Add and mix Saf-instant® The Original Red yeast directly into the flour (use 1 sachet for 500g to 1kg). Its quick absorption and easy and homogeneous mixing with the dough allows an efficient and optimal fermentation.
  • The yeast must be stored in a cool and dry place.
  • After opening the sachet, the product must be used within 48 hours.
  • The yeast does not need to be refrigerated.
  • The yeast does not need to be rehydrated and can be added directly to the flour before kneading.
  • Do not place the yeast in direct contact with ice or iced water.

Shelf life of 2 years from the date of production, unless special regulations apply.

Saf-instant® The Original Red 11g yeast is packaged in a protective atmosphere to preserve its quality and effectiveness. Cardboard box containing 15×12 assembled sachets of 11g or 30×12 assembled sachets of 11g.
